Mango Pickles Recipe

Ingredients :
Main
• 2 medium sized raw mango
• 200ml Mustard oil
• 1 tablespoons Turmeric powder
• 1/2tablespoon Red chilli powder
• Salt to taste
• 1/2teaspoon Ajwain
• 1/2teaspoon Kalongi
Roasted masala
•1 tablespoon Cumin seed (jeera)
•1 tablespoon Coriander seed(dhania )
•2 tablespoon Fennel seed(saunf)
•1/2teaspoon Asofoetida(hing)
•1 tablespoons fenugreek seed (methi)
•1 tablespoons black pepper (kalimirch)
Method :
- take all these masala in a pan and dry roast them and make powder
- wash mango and dry them nicely
- cut them into pieces and place them in a wide dish
- now add turmeric powder, salt mix them nicely with spoon.
- cover and let it rest for 4 to 5 hr.water realeases.
- drain water and spread mango pieces to dry.
- now place mango pieces in a wide mixing bowl.
- add turmeric powder, salt, mix nicely with spoon.
- again add all roasted masala, redchili powder,ajwain,kalongi,
- salt and mix well so that every piece of mango is coated with masala.
- add mustard oil and mix
- transfer pickles to air tight glass jar .
- keep this jar under sun for 2 to 3 days
- pickle are now ready to serve.
- serve this with stuffed paratha or biryani
