                   The beauty of our platter resides in the side dishes. Raita is one such dish which provides an intresting company to our main courses. The white and plain raita may not burst spice of flavour in our mouth but it is certainly refreshing.It  lightens our tastebud and usually comes as a relief from heavy spices.I like raita as every time i serve it to my guest they demands a second help of it. I often serve  raita with my biryanis and pulaos. Its utmost lovable quality is that it can be made in no time. When ever i get a hand on curd I end up making raita as it easy to make and could be prepared with everyday household ingredients.
                          I often add raita to my everyday cooking as almost everyone around is a great fan of it. It tastes great with regular  rice and dal. It is also good for those looking for healtheir options of food. This is because its completly oil free and nutritious.I keep wotking on my raitas to make it even more favorite  choice  of  my foodie friends and family.
                            I have shared a few simple recipes in my blog. It may be usefull especially when you are searching for a quick side dish. I have tried to give variations by adding dry fruits, veggis, fruits and spices in mouth watering combinations.



 1.    Kheera raita,Cucumbet and curd dip

Ingredients :


1.    1cup sliced onion

2.    1cup cucumber peel and cut into small pieces

3.    1and 1/2 cup fresh curd(dahi)

4.    1tablespoon grated ginger

5.    2green chilli chopped

6.    1tablespoon redchili powder

7.    1/4tablespoon sugar or 1/2tablespoon honey

8.     1tablespoon roasted cumin seed

9.     1tablespoon coriander leaves chopped

10.   Salt to taste 

Method:


    1.         Cut onion into thin slices and cut  cucumber into small pieces


    2.       Take fresh curd in a wide bowl and whisk it


    3.       Add above spices in curd and mix


    4.       Add onion and cucumber in curd. Mix. Addsalt to taste.


    5.      Garnish with roasted cumin powder, red chili powder and coriander leaves .



   6.       Serve as a side dish with dinner, lunch, or, breakfast




2.     Lauki raita recipe|kaddu raita recipe|bottle gourd and curd dip


                                 
           I usually to make raita with potato, onion, bottle gourd (kaddu), tomato, carrot etc  more raita recipe you will find in my blog.

Ingredients :


1.    1cup. Fresh curd

2.    1tablespoon roasted cumin seed

3.    1tablespoon redchili powder

4.    1tablespoon grated ginger

5.    2green chilli chopped

6.    1tablespoon coriander leaves chopped

7.    1/4tablespoon sugar or 1/2tablespoon honey

8.     1 and 1/2cup lauki grated

9.     1 tablespoon  black salt

10.   Salt to taste

Method:


    1.      In a heavy bottom kadhai boil grated lauki(bottle gourd). After 4 to 5 minutes drain it and keep aside


    2.       Take fresh curd in a wide bowl.whisk it


    3.       Add above spices in curd and mix


    4.       Now add lauki(bottle gourd) and mix.Add salt to taste


    5.      Garnish with roasted cumin powder, red chili powder ,black salt,chopped green chilli and coriander leaves .

   6.       Lauki(Bottle gourd) raita is now ready.


   Note:

  1.          Use fresh curd.
  2.          More spice can be added as per taste 



 3.       Carrot raita recipe |Gajar raita recipe


                      Raita is a very delicious dish though It has very simple and quick recipe. It can be prepared with those ingredients which are easily available in every household. In summer curd is very common in Indian home ,to give variety to lunch or dinner platter different types of side dish is prepared.Raita is one of those dish.
                    I usually to make raita with potato, onion, bottle gourd (kaddu), tomato, carrot etc  more raita recipe you will find in my blog.

Ingredients :


1.    1cup. Fresh curd

2.    1tablespoon roasted cumin seed

3.    1tablespoon redchili powder

4.    1tablespoon grated ginger

5.    2green chilli chopped

6.    1tablespoon coriander leaves chopped

7.    1/4tablespoon sugar or 1/2tablespoon honey

8.     1and 1/2cup grated carrot


Method:

     1.      Grate 1 and 1/2 cup carrot


    2.       Take fresh curd in a wide bowl


    3.       Add above spices in curd and mix


    4.       Now add grated carrot and mix.Add salt to taste


    5.      Garnish with roasted cumin powder, red chili powder,black salt,chopped green chilli and coriander leaves .

    6.      Carrot raita is  now ready to serve.

   Note:
  1.          Use fresh curd.
  2.          More spice can be added as per taste 
     

4.     Tomato raita recipe, Tomato dip

  Raita is avery delicious dish though It has very simple and quick recipe. It can be prepared with those ingredients which are easily available in every household. Ingredients :


1.    1cup. Fresh curd

2.    1tablespoon roasted cumin seed

3.    1tablespoon redchili powder

4.    1tablespoon black peppercorn powder

5.    2green chilli chopped

6.    2tablespoon coriander leaves chopped

7.    Salt to taste

8.    Two medium size tomato

9.    1/2tablespoon grated ginger



Method:


1.     Cut tomato in small pieces


2.     Take fresh curd in a wide bowl and whisk it


3.       Add above spices in curd and mix  .


4.      Now add tomato pieces and mix.Add salt to taste. 


5.      Garnish with roasted cumin powder, red chili powder and coriander leaves .

6.      Tomato raita is ready to serve.


Note:

1.  Use fresh curd.



2.  More spice can be added .







5.          Palak Raita recipe  /palak and curd dip recipe

                      Raita is avery delicious dish though It has very simple and quick recipe. It can be prepared with those ingredients which are easily available in every household. Ingredients :


1.    1cup. Fresh curd

2.    1tablespoon roasted cumin seed

3.    1tablespoon redchili powder

4.    1tablespoon grated ginger

5.    2green chilli chopped

6.    1tablespoon coriander leaves chopped

7.    1/4tablespoon sugar or 1/2tablespoon honey

8.     1and 1/2cup palak chopped, boiled and drained

9.     1tablespoon black salt

10.    Salt to taste


Method:


    1.     Boil finely chop palak for 3 to 5 min.
Drain and keep aside.

    2.       Take fresh curd in a wide bowl.Whisk it nicely.


    3.       Add above spices in curd and mix


    4.       Now add palak and mix.Add salt to taste


    5.      Garnish with roasted cumin powder, red chili powder ,chopped green chilli and coriander leaves .



Note:


1.    Use fresh curd.
2.    More spices can be added as per taste.

Sweet dosa with whole wheat flour Whole wheat flour dosa Prep time : 10min cook time:  05min Total time :15 min Cusine:Indian Dish :breakfast Author:Seema Priyadarshani Ingredients : 1and 1/2cup Atta(whole wheat flour)  1/2cup sugar 2green cardmon crushed 1/2cup milk(optional) Oil to make dosa Water to make batter Method : Take atta (whole wheat flour) in a wide bowl. Add sugar and mix Add milk to the atta and sugar mixture .mix Now add water little by little and mix well using spoon so lump is not formed  Add crushed cardmon in batter and mix Heat tawa to make dosa.smear oil on tawa before spreading dosa If using non stick tawa keepa flame low, than drop one spoonful of batter and spread it in circular giving round or oval shape Drizzle oil on the edges, When one side turns golden brown flip it to the other side . Fold and serve. Serve hot with chilli pickle.  Note : First heat pan and then reduce the flame ,then spread dosa batter increase

Raisin cookies | Raisin biscuits

Raisin Cookies| kishmish ke cookies | Raisin biscuits Prep time:20min Cook time:20min Total time:40min Author:Seema priyadarshani Ingredients : 1.    1and1/2 cup maida(all purpose flour) 2.    3/4 cup butter 3.    1/2 cup milk 4.    50 ml condensed milk 5.    70 gm castor sugar 6.    1/2cup chocolate(broken into small pieces) optional 7.    1tsp baking powder 8.    1/2tsp baking soda 9.    1/2tsp vanilla essence 10.  1/2 cup raisins 11.   Salt as required Method : 1.    Sieve maida, baking powder and baking soda together. 2.    Whisk butter and castor sugar together till light and fluffy 3.    Add condensed milk and mix it.add flour and chocolate pieces ,raisins and form together into a soft dough. 4.    Meanwhile preheat the oven. 5.    Roll the dough and cut into fancy shape or divide dough into equal small portion and gently press to flatten it and place on a baking tray and bake it for 15 to 20 min. 6.    Allow the cookies to cool
