Carrot halwa recipe |gajar halwa recipe

           Halwa, reminds me of those days when my mother used to make for us   Halwa ,our all time favourite,has very simple recipe .
          My father mostly enjoyed halwa with a cup of milk and it is just like a full meal.
           My children are  very fond of halwa so I often make it on holidays.I have tried to give this recipe a new combination to make it interesting.

Ingredients:


1.   1and1/2cup grated carrot

2.   1cup sugar(or as required)

3.   2 to 3 green cardmon                
(choti elaichi )crushed

4.   3 - 4 Tablespoon ghee (oil or butter)

5.   10 to 12 kaju _crushed (cashew)

6.   1/4 cup raisins (kishmish)

7.   1/2 tablespoon chironji

8.   1/2 cup khoya

8.   1 and 1/2cup milk

Method:

1.     Heat heavy bottom kadhai and add ghee.
2.     When ghee becomes hot add crushed cashew and chironji.saute
3.     Now add grated carrot and stir.
4.     Keep on stirring continously so that carrot does not stick to the pan and roast evenly.
5.     Keep on stirring  for 5 to 7 min till its grain changes its colour.
6.     When carrot turns to light brown colour then add khoya .(on low flame) and raisins .
7.     Stir continously and add milk.keep on stirring ,mixture will starts to thicken .
8.    When mixture  leave the edges of the kadhai it (halwa) is ready.
9.    Garnish with crushed green cardmon ,desicated coconut powder and dryfruits.

                             






Note:


1.    While frying  mixture will splutter so be careful.

2.     Add sugar as per your taste.
