Aloo parwal ki sukhi sabji/potato and pointed gourd sabji

This sukhi sabji is very easy and quickly made.Make this simple sabji with little or without masala. This sabji is perfect for those wbo like to eat less masala.

Ingredients :
1.  250gm    Parwal(pointed gourd  )
2.  250gm    Aloo(potato)
3.  100gm    pyaz (onion)
4.  2 3 whole green chilli
Spices :
1.  1/2tbs turmeric(haldi)
2.  1/2tbs Redchilli(lalmirch powder)
3.  1/2tbs cumin powder(jeera)
4.  1/2tbs  fenugreek seed (methi)
5.  Salt to taste
6.  Oil(mustard) for frying
Method:
1.    Wash and cut parwal in long slices.
2.    Wash ,peel and  cut potato in long slices.
3.    Wash and cut onion in thin slices.
4.    Now  heat heavy bottom kadai .
5.    Add 21/2tbs of oil.
6.    When oil is hot add fenugreek seed and 1/4tbs of hing(asoefoetida).
7.    Now add sliced onion.
8.    Fry till onion becomes translucent.
9.     Now add sliced parwal and potatoes.
10.   Stir it for few minutes on high flame
so they fry evenly.
11.   cover it and let it to simmer on moderate heat.
12.    Stir occasionally so it doesn't burn.
13.    After ten to fifteen minutes it is ready to serve.
14.    Serve it with paratha or roti.



Step by step method:
1.     Cut thin slices of parwal(pointed gourd), aloo (potato),onion, green chilli.  




2.   Heat heavy bottom kadai .Add oil.




3.    In hot oil add green chilli and fenugreek seed. 

4.     Add sliced onion.


5.       Add sliced parwal and potatoes .

6.     Now add dry ingredients Redchilli powder ,turmeric powder and salt to taste


7.    Aloo parwal ki sukhi sabji is ready.


You can serve this sukhi sabji with hot parathas and phulkas
